Komodo Kamado Ceramic Smoker - Two layers of insulation produces superior results

Low and Slow cooking in a ceramic smoker is how meat absorbs the complex flavors from the charcoal and your smoking woods added for a focused flavor profile.  
Metal charcoal grills actually radiate and loose heat like a sieve looses water. Huge volumes of of charcoal must be burned to maintain your low and slow cooking temps because  of the large percentage of the heat and smoke literally lost out the chimney and heat radiated from the body. The result of burning these huge volumes of charcoal is of course the huge volumes of air that is required to burn the fuel. This hot dry air dries out your meat and wastes fuel and smoking wood.  
Other ceramic grills use the mass of their dense glazed bodies to reduce heat loss. This has made them famous for moist results they produce.. It's easy to find people ranting and raving about the food from their glazed egg-shaped grills.   The truth is a "dense" glazed pot is not insulating by definition. One can easily confirm this statement by just touching it at medium heat. Your burned hand will immediately remind you of their lack of insulation.  
One the other hand the Komodo Kamado has a three layer body, a dense hot-face, a very porous insulation and then jacketed with a high tech acrylic insulation.  This three layers construction requires burning a very small volume of fuel, about a tennis ball worth of charcoal burning to maintain low and slow temps. On long cooks with large pieces of meat this low airflow actually creates a steam cloud inside the lid.   Less airflow also means that your smoke will be in contact with your meat for more time before it's vented. 
For comparison, one 16 lbs bowl of charcoal at 235ºf will last for about 85 hours. Most metal smokers need to be refilled every 4-5 hours, these numbers speak volumes. The insulation also provides great stability for set and forget low and slow cooking.. no more staying up all night tending your fire and chasing temperature. You can easily
set your target cooking temp, go to sleep, wake up to find it chugging away at the same temp you left it.. That's how great engineering makes KK the most user friendly ceramic smoker built.
